Vegetarian Coconut Cake

Cooking Time : 25 minutes

Ingredients :

Flour 1/2 Cup (65 gm)
Rawa 1/2 Cup (100 gm)
Baking Powder 1 Tsp (5 gm)
Sugar(powdered) 1 Cup (200 gm)
Desiccated Coconut 1 Cup (80 gm)
Curd 1 Cup (200 gm)
Cashewnuts (chopped) 50 gm
Cardamoms (powdered) 4

Method :

  • Sieve flour,rawa and baking powder twice together.
  • Add sugar and mix well.
  • Gradually fold in the desiccated coconut and curd.
  • Continue beating till the mixture becomes light and fluffy.
  • Add the chopped cashewnuts and cardamom powder.
  • Grease a cake tin and pour the mixture into it.
  • Bake in a moderatly hot oven for 40 to 50 minutes or till done.
  • Turn out of the cake tin and cool on a wire tray.
