Cooking Time : 40 minutes

Ingredients :

Milk 1-1/4 litre
Basmati Poha (beaten rice) 4 tbsp (60 gm)
Sugar 250 gm
Cardamom (powder) 3/4 tsp (4 gm)
Nutmeg(powder) 1/4 tsp (1 gm)
A Few Strands Saffron
Almonds (sliced) 10
Chironji Seeds 2 tsp (10 gm)

Method :

  • BRING the milk to a boil in a heavy bottomed pan.
  • Lower the heat and keep stirring constantly.
  • Clean and wash the poha.
  • Squeeze out the water and add the poha to the milk.
  • Keep stirring till reduced to about one-third its quantity and the poha is cooked.
  • Add sugar and simmer till the sugar is dissolved.
  • Add cardamom powder and nutmeg powder.
  • Mix well.
  • Dissolve saffron in a little milk and add to the poha kheer.
  • Stir well, Serve hot, garnished with almond slices and chironji seeds.
