Rawa Coconut Barfi

Cooking Time : 40 minutes

Ingredients :

Ghee 1/2 Cup (100 gm)
Rawa 1 Cup (200 gm)
Flour 1/2 Cup (65 gm)
Grated Coconut 1 Cup (80 gm)
Cashewnuts (chopped) 1/2 Cup (80 gm)
Sugar 1 Cup (200 gm)
Cardamoms (powdered) 6
Milk (with cream) 1/2 Cup (120 ml)
A Few Strands Saffron (soaked in a little warm milk) -
Raisins 1/4 Cup (40 gm)
Pistachios 1/4 Cup (40 gm)

Method :

  • Heat ghee in a pan.
  • Add rawa,flour and grated coconut and fry for a few minutes.
  • Add the cashewnut pieces.
  • Stir well.
  • Remove the pan from heat.
  • When cool,add sugar, cardamom powder and grind the mixture for a minute, so that all the ingredients get mixed well.
  • Reheat the mixture in a pan and gradually add milk along with cream.
  • Stir well.
  • Keep stirring till the mixture begins to leave the sides of the pan.
  • Add saffron milk, raisins and pistachios. Spread the mixture on a greased plate.
  • When cool, cut into desired shaped pieces.
