Cooking Time: 4 hour

Ingredients:

Port Wine Jelly Crystals
1 packet
Boiling Water
11/2 cups
Custard Powder
4 tbsp
Milk
375mL
Sugar
1/2 cup
Vanilla Essence
1 tsp
Cream(whipped)
1 cup
Macaroons
12 nos
Madeira Cake
1 nos
Sherry
1/2 cup
Strawberries 1 punnet
Blueberries
1 punnet

Method:

  • Dissolve jelly crystals in boiling water.Refrigerate until partially set '
  • Blend custard powder with mil; add sugar and vanilla essenc.Cook for 3-5 minutes on HIGH, stirring twice during cooking.Cool.
  • Fold half whipped cream into custard.
  • Arrange macaroons and cake in the base of 4 individual serving dishes.Pour half the sherry over macaroons and cake.Top with a layer strawberries,blueberries, jelly and custard.
  • Repeat layers.Chill for 2-3 hours.
  • Decorate with remaining whipped cream.
