Chocolate Almond Cake

Cooking Time : 30 minutes plus baking time

Ingredients :

Butter (40z)

125 gm

Castor Sugar 125 gm
Melted Chocolate 125 gm
Eggs 4(Separated)
Ground Almonds 125 gm
Plain Flour Sifted 50 gm
For Chocolate Butter Icing
Plain Chocolate (Broken Into Pieces) 175 gm
Water 1 Tbsp
Butter (10z) 25 gm

Method :

  • Line and grease a cake tin. Beat the butter and sugar together until light & fluffy, then beat in the melted chocolate.
  • Beat the egg yolk into the creamed mixture and then beat in the ground almonds and sifted flour.
  • Whisk the egg whites until stiff & carefully fold into the cake mixture in a figure of eight motion with a metal spoon.
  • Pour the mixture into the prepared cake tin and bake in a preheated oven 160 C for 50 minutes - 1 hour.
  • Leave the cake in the tin for 5 minutes, then turn out and cool on a wire rack.
  • Beat the icing ingredients in a bowl over a pan of hot water. cool slightly then spread 3 quaters  of the icing over the cake and leave to set.
  • Place the remaining icing in a small piping bag fitted with a writing nozzle and pipe attractive lines over the top.
  • At the time of serving just microwave for few seconds so that it feels that it is made just a few seconds back.
