Chocolate Fudge Cake

Cooking Time : 20 minutes plus baking time

Ingredients :

Plain Chocolate (Broken Into Pieces) 125 gm
Milk 300 ml
Self Raising Flour 250 gm
Baking Powder 1/2 Ts
Butter 125 gm
Soft Brown Sugar 125 gm
Eggs (Separated) 2
Chocolate Butter Icing 1 Qty

Method :

  • Line & grease a cake tin. Place the chocolate & the milk in a pan and heat gently, stirring untill melted.
  • Sift the flour and baking powder together.
  • Cream the fat & sugar until light & fluffy and then beat in the egg yolks. One at a time.
  • Fold in the flour mixture, & then add 3 quarters of the chocolate milk and beat until smooth.
  • Stir in the remaining chocolate milk.
  • Whisk the egg whites until fairly stiff and then fold 1Tbsp of the egg white into the chocolate mixture & lighten it.
  • Carefully fold in the rest of egg whites in a gentle figure of eight motion with a metal spoon.
  • Turn the cake mixture into the prepared tin and bake in a preheated oven 180 C for 40 minutes.
  • Cool on a wire rack.
  • Pour the icing on the cake. To make it rich sandwich some icing in between the cake.
  • Decorate with hazel nut.
