Cooking Time: 11/2 hours

Ingredients:

Chicken 15 no.
Water 2-3 litres
Chicken Stock CUbes 4
Carrot(sliced) 1 nos
Onion(peeled and cut into quarters) 1 nos
Celery(chopped) 1 stick
Bay Leaves 2 nos
Peppercorns 6 nos
Salt and Pepper To taste

Method:

  • Rinse chicken under cold water.
  • Place in a large, deep dish with all other ingredients (water should nearly cover the chicken).
  • Cover with lid or plastic wrap
  • Cook for 20 minutes on HIGH.
  • Cook on a further 1 hour on MEDIUM.
  • Take out chicken and remove flesh from the bones.
  • Strain soup, discarding vegetables.
  • Put strained soup and chicken meat into a bowl. Cover and cook for 5-10 minutes on High - until hot.

Note: Fresh vegetables may be added to soup after it has been strained.
