Ingredients:

| Carrot(sliced) |

| Onion(peeled and cut into quarters) |

| Celery(chopped) |

| Bay Leaves |

| Peppercorns |

| Salt and Pepper |

Method:
- Rinse chicken under cold water.
- Place in a large, deep dish with all other ingredients (water should nearly cover the chicken).
- Cover with lid or plastic wrap
- Cook for 20 minutes on HIGH.
- Cook on a further 1 hour on MEDIUM.
- Take out chicken and remove flesh from the bones.
- Strain soup, discarding vegetables.
- Put strained soup and chicken meat into a bowl. Cover and cook for 5-10 minutes on High - until hot.
Note: Fresh vegetables may be added to soup after it has been strained.
