Cooking Time: 1 hour

Ingredients:

Chicken Thighs
1.5kg
Plain Flour
1/4 cup
Rashers Bacon(finely chopped)
2 nos
Green Capsicum(diced)
1 nos
Onion(finely chopped)
1 nos
Tomatoes(peeled)
425g
Tomato paste
2 tbsp
Chicken Stock(cubes)
2 nos
Soy Sauce
1 tbsp
Salt & Pepper
to taste
Mushrooms(sliced)
200g

Method:

  • Toss chicken thighs in flour.
  • Combine all ingredients, except mushrooms,in a 2-litre casserole dish.
  • Cover and cook for 50 minutes on HIGH MIX/ROAST 200o C.Stir halfway through cooking.
  • Add mushrooms.Cook, uncovered, a further 5 minutes on HIGH MIX/ROAST 200o C.
