Chicken Satay Drumsticks

Cooking Time: 21/2 hour

Ingredients:

Chicken Drumsticks 8 nos
Crunchy Peanut Butter 1/2 cup
Plain Yoghurt 1/4 cup
Sweet Fruit Chutney 1 tbsp
Lemon Juice 1 tbsp
Soy Sauce 2 tbsp
Dry Sherry 2 tbsp
Red Chilli(finely chopped)(Optional) 1 nos
Shallots(chopped) 3 nos
Cumin 1/4 tsp
Cumin Powder 1/4 tsp
Fresh Ginger(grated) 1 tsp
Cocunut Cream 1/3 cup
Plain Flour 1/2 cup
Pappadams 8 nos

Method:

  • Combine peanut butte, yoghurt, chutney, lemon jiuce, soy sauce, sherry, chilli, shallots, cumin, curry powder, ginger and cocunut cream in a bowl.Mix well.
  • Toss drumsticks in flour and then coat in satay sauce.Marinate for 1-2 hours.
  • Place pappdams on turntable.Cook for 11/2 minutes on HIGH.Allow to cool, then crumble.
  • Preheat oven to 200o C.
  • Coat drumsticks with pappadams.
  • Place on Low Rack and cook for 17-19 minutes on HIGH MIX/ROAST 200o C.
