Method :
- Take whole brinjal and burn it lightly on gas burner directly.
- Peel off the skin of brinjal and mash the remaining inner portion.
- Take a pan and heat oil.
- Add ginger, green chillies and onions and fry till done.
- Now add chopped tomatoes and mix well.
- Add salt, garam masala, red chilli powder and amchoor powder.
- Cook for 5-7 minutes.
- Now add mashed brinjal and mix well.
- Cook covered for 10 minutes on low flame.
- Garnish with coriander leaves and serve hot.
