Cooking Time : 30 minutes

Ingredients : 

Brinjal/Baingan 1 Big
Tomatoes (Chopped) 5-6
Onions (Chopped) 4
Ginger (Grated) 1 Piece
Oil 2 Tbsp
Green Chillies (Chopped) 2

Red Chilli Powder

1/2 Tsp
Salt To Taste
Garam Masala 1/2 Tsp
Fresh Green Coriander Leaves 2 Tbsp
Amchoor 1/2 Tsp

Method :

  • Take whole brinjal and burn it lightly on gas burner directly.
  • Peel off the skin of brinjal and mash the remaining inner portion.
  • Take a pan and heat oil.
  • Add ginger, green chillies and onions and fry till done.
  • Now add chopped tomatoes and mix well.
  • Add salt, garam masala, red chilli powder and amchoor powder.
  • Cook for 5-7 minutes.
  • Now add mashed brinjal and mix well.
  • Cook covered for 10 minutes on low flame.
  • Garnish with coriander leaves and serve hot.
