Cooking Time: 30 minutes

Ingredients:

For Rice:
 
Rice 1 cup
Ghee/Oil 1 tsp
Cardamom(elaichi) 2 pcs.
Cinnamon(dalchini) 2 pcs.
Cloves(laung)  
Peppercorns(kali mirch)  
Bay Leaves(tejpatta) 2 nos
Salt to tase
Water 2 cups
Milk and Saffron(kesar) 1/2 cup
For Vegetable Layer:
 
Ghee/Oil 1 tbsp
Onion(chopped) 1 nos
Tomatoes(chopped) 3 nos
Garlic Flakes 6-7
Green Chillies(chopped) 2-3
Green Peas 1/2 cup
Carrots 1/4 cup
Cauliflower Florets 1/2 cup
Cumin Seeds(jeera) 1 tsp
Water 1/2 cup
Salt, Black Pepper & Red Chilli Powder add to taste
Turmeric Powder 1/4 tsp
Garam Masala Powder 1/2 tsp

Method:

  • Wash and soak rice in 2 cups of water for half an hour. Drain the water.
  • Microwave ghee/oil in a microwave safe bowl for 30 seconds at 100% power.
  • Add cardomom, cinnamon, peppercorn, salt, rice and 2 cups of water. Boil for 9-10 minutes at 100 % power and then at 60% power for 5-6 minutes.
  • Add 1/2 cup milk and saffron to the rice. Allow to stand covered for 5 minutes.
  • In another microwave safe bowl microwave ghee at 100 % power for 30 seconds.
  • Addchopped onion, tomatoes and garlic. Microwave for 2 minutes at 100 % power.
  • Add rest of the spices, chopped vegetables and 1/2 cup waterand microwave covered for 5-6 minutes at 100 % power. Allow to stand for 5 minutes.
  • In a serving dish place one layer each of boil rie and microwaved vegetables one by one. Microwave(covered) for 4 minutes at 100% power.Allow to stand for 5 minutes.
  • Serve hot with dal or raita.
