Ingredients :

Oil
5 tbsp
Cumin Seeds(jeera)
1 tsp
Asafoetida(hing)
a pinch
Green Chillies-Ginger(paste)
1 tsp
Sugar
1 tsp
Broad Beans(papdi,vaal)
100 gms
Brinjal(baingan)
100 gms
Potaoes
100 gms
Sweet Potato(shakarkand)
100 gms
Turmeric Powder(haldi)
a pinch
Green Coriander(chopped)
1/2 cup
Coconut (crushed)
1/2 cup
Salt
to taste
Red Chilli Powder 1/2 tsp
Coriander Powder
1/2 tsp
Garam Masala Powder
1/2 tsp

Method :

  • Heat oil in a pan.Add cumin seeds, asafoetida, green chillies-ginger paste and saute it for 2 mins.
  • Add broad beans, brinjal, potato, sweet potato and cook for further 3 mins.
  • Now add turmeric powder and 1/2 cup water and cook it on a low flame.
  • Add red chilli powder, coriander powder and garam masala powder and mix it well.
  • After 3-4 mins. add sugar and green coriander(chopped), crushed coconut.Cook for another 2-3 mins.
  • Serve hot with roti/naan.
