Cooking Time: 30 min

Ingredients:

Oil 1/2 cup
Butter 60g
Onions(peeled and chopped) 2 nos
Carrots(finely chopped) 3 nos
Potato(peeled and chopped) 1 nos
Celery(chopped) 3 sticks
Zucchinis(chopped) 2 nos
Cabbage(shredded) 1/4
Beef Stock 3 cups
Peeled Tomatoes 2 X 400g cans
Salt and Pepper To Taste

Method:

  • Heat butter and oil for 2 minutes on HIGH.Add onion and cook for 3 minutes on HIGH.
  • Add carrots and potato.Cover and cook for 5 minutes on HIGH.
  • Add celery, zucchini and cabbage.Cover and cook for 3 minutes on HIGH. Add stock and undrained tomatoes.Cook, covered, for 15-20 minutes on HIGH stirring occasionally.
  • Serve hot,toppedwith parmesan cheese.
