Ingredients :| Package uncooked farfalle pasta | 500 Gms | | Olive oil or any other cooking oil | 1/4-cup | | Cloves chopped garlic | 5 | | Crushed red pepper flakes/ dry red chillies | 1 teaspoon | | Lemon juice | 3 tablespoons | | Pine nuts(optional) | 1/2 cup | | Pitted black olives | 5 | | Chopped sun-dried tomatoes | 1/2 cup | | Crumbled mozarella cheese | 1 cup | | Salt and pepper | to taste |
Method: - Bring 1 ltr of water to a rapid boil (2 teaspoons of salt can be added, optional). Add farfalle. Add a tbsp of oil and return water to rapid boil and cook uncovered, stirring frequently, for about 10 to 12 minutes. Drain Rinse in cold water.
- Heat the oil in a large frying pan over medium heat, and cook the garlic until lightly browned.
- Mix in red pepper and lemon juice. Stir in the pine nuts, Olives, and sun-dried tomatoes.
- Toss in the cooked pasta and mozarella cheese.
- Season with salt and pepper Serve.
