Rainbow Fusili Salad

Ingredients :

Fusili pasta  500 gms               
Tomatoes, chopped  2
Green bell pepper,chopped  1
Onion, chopped  1
Large celery, chopped  1
Broccoli florets  1-cup
Fresh sliced mushrooms  1 cup
Italian-style salad dressing (Mix of 4 parts of oil and 2 parts of vinegar, salt and pepper to taste)  2 tbs
Black olives, pitted and sliced  1 cup
Crushed black pepper and chilly flakes for garnishing  1 tbsp

Method :

  • Bring 1 ltr of water to a rapid boil (2 teaspoons of salt can be added, optional). Add fusili. Add a tbsp of oil and return water to rapid boil and cook uncovered, stirring frequently, for about 10 to 12 minutes. Drain. Rinse in cold water.
  • Combine cooked pasta with tomatoes, green bellpepper, onion, celery, broccoli, mushrooms, olives and italian salad dressing.
  • Garnish with black pepper and chilly flakes.
  • Cover and chill. Toss salad before serving.
