Stuffed Olives in Cheese Pastry

Cooking Time: 40 min

Ingredients:

Grated Cheddar Cheese 1 cup
Butter 125g
Plain Flour,sifted 11/2 cups
Egg Yolks 2 nos
Stuffed Olives 3

Method:

  • Place cheese and butter in a food processor.Process until creamy.
  • Add flour and egg yolks; mix until mixture forms a stiff dough.
  • Turn out onto a lightly flavoured surface.Wrap in greaseproof paper and chill for 30 minutes.
  • Drain olives.Roll cheese pastry out between two sheets of greaseproof paper; cut into 4cm rounds with a floured pastry cutter.
  • Preheat oven to 200o C.
  • Roll one olive up in pastry between hands until smooth.Place on a greased pixzza tray.
  • Place on Low Rack.Cook for 15-20 minutes on CONVECTION 200o C.
  • Serve Hot.
