Brinjal Pulao

Cooking Time : 11/2 hour

Ingredients :

Rice 375 gms
Brinjal(baingan) 150 gms
Cumin Seeds(jeera) 3/4 tsp
Salt
Turmeric Powder 3/4 tsp
Onions(chopped) 150 gms
Ghee 50 gms
Coriander Powder(dhania powder) 3/4 tsp
Dry Mango Powder(Aamchoor) 1/2 tsp
Asafoetida(hing) a pinch

Method :

  • Soak rice in water for 1 hour.
  • Cut brijal and onions into pieces.
  • Heat oil in a pan and add chopped onions to it.
  • Saute it until light pink then add cumin seeds, red chilli powder, salt, garam masala powder, turmeric powder and asafoetida.
  • Add 600 gms water to it.
  • Add rice to it and saute it until rice softens.
  • Fry brinjals pieces in ghee and add dry mango powder (aamchoor) to it.Heat it for 7-8 minutes.
  • Add this to the rice and mix well.
  • Serve hot.
