Cream of Tomato Soup

Cooking Time: 40 minutes

Ingredients:

Onion(peeled and chopped)
1 small
Rasher Bacon(rind removed and chopped)
1 nos
Butter
30g
Carrot(peeled and sliced)
1 nos
Celery(chopped)
1 stick
Flour
2 tbsp
Tomatoes(Large and quartered)
3 nos
Chicken Stock
600mL
Bouquet Garni
Salt and PepperĀ 
To taste
Cream
2 tbsp
Parsley(chopped)

Method:

  • Cook onion and bacon in the butter for 3 minutes on HIGH.
  • Add carrot and celery. Cover and cook a further 3 minutes on HIGH.
  • Sprinkle in flour and stir. Add the quartered tomatoes, stock and bouquet garni. Cover and cook for 15-20 minutes on HIGH.
  • Remove bouquet garni; puree.
  • Return to the microwave, adding cream, parseley and seasonings. Cover and cook for 3-5 minutes on MEDIUM HIGH.
