Method:
- Make a paste of coconut and green chillies.
- Wash and chop all vegetables to approx 1" pieces. Microwave (covered) in a micro safe bowl with 1/2 cup water at 100% power for 9-10 mins.
- Add microwaved vegetables, prepared coconut and chilli paste, beaten curd and salt and pepper. Microwave (covered) at 60% power for 6 mins.
- In another microwave safe bowl microwave oil at 100% power for 30 secs.Add mustard seeds, dry red chillies and curry leaves. Microwave at 100% power for 2 mins.
- Pour this tempering over cooked vegetables and microwave for 2 mins. at 100% power.
- Allow to stand for 5 mins.
- Serve hot with poories and rice.
